Let’s start by saying– good riddins, 2020. What a year! It is my hope and prayer that 2021 is full of all the things we weren’t able to get this year: hugs, kisses, time with family and friends, a normal work schedule. That being said, who says we can’t usher in 2021 with some decently healthy, extraordinarily flavorful treats?! These are perfect for my gluten free friends or those who just want healthier options. Enjoy!

  1. Roasted Red Pepper Soup
    My first experience with this delicious soup was at a Reno’s Roadhouse. I’m currently doing the Noom program so I’m trying to eat more “green foods.” Noom recommends soup as a filling alternative to appetizers, so I took a chance and ordered a bowl. Oh. Mylanta. It was so rich, smoky and warm! So, naturally I had to look up the recipe when I got home. Let me know what you think!
